Ingredients to Make Microwave Chocolate Chip Cookie

Melted Butter: Using melted butter instead of solid butter helps create a chewy texture in the cookies. You can sub in vegan (dairy free) butter or refined coconut oil if you prefer.

Maple Syrup: Maple syrup adds sweetness and depth of flavor to the cookie. It also helps the cookie to brown nicely and enhances the chewy texture. If you don’t have maple syrup, agave nectar or honey are great alternatives!

Coconut Sugar: Coconut sugar is a natural sweetener that adds a rich, caramel-like flavor to the cookie.

Almond Flour: For a slightly nutty flavor and to help to bind the cookie together.

Chocolate Chips: Because it’s a chocolate chip cookie, after all! They add richness and decadence to the cookie, and also give the cookie its signature chocolatey flavor.

How to Make A Microwave Chocolate Chip Cookie

  1. Mix it. In a small bowl, mix together the melted butter, maple syrup, coconut sugar, baking powder, vanilla extract, salt, oat flour, and almond flour. Mix the ingredients well with a whisk or spatula, making sure everything is evenly combined.
  2. Dish it. Spoon the cookie dough into a microwave safe bowl or baking dish. Ramekins or shallow mugs work great! Use a small, single-serve size container to ensure that the cookie will cook evenly. Use the back of a spoon or rubber spatula to spread the cookie out in an even layer.
  3. Bake it. Place the bowl or dish in the microwave and set the timer for 45-50 seconds on high heat. Microwave cooking times may vary, so keep an eye on the cookie as it cooks. You want it to be slightly firm to the touch but still soft in the center.
  4. Sprinkle it. After removing the cookie from the microwave, sprinkle the chocolate chips on top of the cookie. If you want, add a pinch of flaky salt.
  5. Cool it. The cookie will puff up significantly so allow the cookie to cool and set for two minutes before digging in. Allowing it to cool will give the cookie a chance to firm up and ensure that it’s not too hot to eat.

Use a microwave-safe bowl or baking dish: Make sure that the container you’re using is safe for use in the microwave. Ceramic or glass bowls are usually a good choice.

Use a small, single-serve size container: A smaller container will ensure that the cookie cooks evenly and is the right size for a single serving.

How to Store & Reheat

If you happen to have any leftover microwave chocolate chip cookie (I doubt it, but if you do), here’s the best way to store and reheat them:

  1. Storage: Let the cookie cool completely, then store it in an airtight container at room temperature for up to 2-3 days. If you want to store it for longer, you can wrap it in plastic wrap and freeze it for up to a month.
  2. Reheating: To reheat the cookie, you can microwave it for 10-15 seconds on medium heat, or until warm. Alternatively, you can warm it up in a toaster oven for a few minutes or in a preheated oven at 350°F for about 5 minutes.

It’s worth noting that the texture of a microwave cookie is different than a traditional oven-baked cookie, and it may not retain its texture and taste as well after it’s been reheated. So, it’s best to enjoy your microwave chocolate chip cookie fresh out of the microwave, while it’s still warm and gooey or within an hour or two of making it!

Ingredients

  • 1 tbsp butter, melted
  • 1 tbsp maple syrup, honey or agave nectar

  • 1/4 tsp baking powder
