Coconut shake is made with chocolate ice cream and toasted coconut shreds. The chocolate + coconut combo is so delicious and decadent!

This coconut shake is such a delicious and indulgent chocolate treat to whip together! It only calls for a handful of ingredients and us fun to customize.

It reminds me a bit of an almond joy with the chocolate + coconut combo. I toasted up the coconut shreds to really hit home that coconut flavor.

Coconut Shake Ingredients

Coconut Shreds. I always go for unsweetened, finely shredded coconut. Probably any shredded or flaked coconut would work. I like the finely shredded kind because it incorporates nicely and I use it for Gluten Free Coconut Cake, Coconut Crusted Avocado Fries, Chocolate Coconut Heart Candies and these Coconut Macaroons too!

Ice Cream. Any kind you like! I’m using chocolate ice cream because I feel like the chocolate + coconut combo reminds me of almonds joys. Try vanilla, strawberry or another flavor ice cream! Or, try a low carb or dairy free ice cream if you want!

Coconut Milk. This is going to bump up the coconuttiness but you can sub in whatever milk you have or like!

Agave Nectar. For just a touch of extra sweetness! I like using agave nectar but you can sub in honey or maple syrup if you prefer.

Vanilla. Just a splash because I feel like every milkshake needs it!

How to Make this Coconut Shake

Toast the coconut

Place the coconut shreds in a pan over medium heat and stir frequently until the coconut is light brown and fragrant. It should take about five minutes to toast up.

Once it’s nice and toasty make sure to immediately transfer to the blender. The shreds will continue to toast in the pan so if you’re prepping this ahead or not making the shake immediately, transfer to a bowl and set aside.

Blend it up!

Transfer the coconut shreds to a blender along with the ice cream, milk, agave, and vanilla.

Blend on high until smooth. 

Transfer to a glass and garnish with any extra coconut shreds. Garnishing the shake with coconut shreds will make this shake a bit more textured so if you want it smooth, leave them off.

More ways to customize it!

Switch up the ice cream! I’m using chocolate ice cream because I feel like the chocolate + coconut combo reminds me of almonds joys. Try vanilla, strawberry or another flavor ice cream! Or, try a low carb or dairy free ice cream if you want!

Ingredients

  • 1/2 cup unsweetened coconut shreds
  • 1 cup chocolate ice cream
  • 1/2 cup unsweetened coconut milk
  • 2 tablespoons agave nectar
  • 1 teaspoon vanilla extract
