So this just happened and I need to share. I was riding my bike with the kid trailer attached, said kids riding happily in the back. I see a little girl in the distance and her eyes lit up as she saw me approach.
She looked so excited and I instantly related to her. I loved kids and babies when I was a little girl too. She’s just like me. She couldn’t wait to see my two precious pumpkins riding in the back.
She waited as I biked up the hill towards her, eyes locked on the trailer behind me, eagerly waiting to see my cuties. But as I passed her, her face dropped. “What’s wrong with you?” I thought. “My kids are adorable.”
And just like that the little girl turned to her mother and said, “Ugh it’s only kids, she not pulling dogs.” WHAT!!? Kids say the darnedest things, I guess?!
But I digress. Let’s move on to these insanely delicious crunchy hazelnut bars. Think Ferrero Roche, people!! Can you tell I just bought a big bag of hazelnuts because I am making alllll the hazelnutty things.
I’m a hazelnut junkie, y’all. Ok ok, I’m from New Jersey. I should say something liiiike, “I’m a hazelnut junkie, yous guys.” It all started with Nutella when hazelnut first made it’s debut into my life. What is this nutty happiness amongst all this chocolate? Hazelnut. And so it began, the decade(s?) long journey into my chocolate hazelnut love affair.
Ok, so here’s the deal. If you’re looking for more no-bake desserts, I strongly suggest these chewy peanut butter bars or these no bake peppermint pecan brownies 🙂 Or search “no bake” in the search bar and peruse allll the yummy options because really there’s a bunch I can’t even list.
So let’s make some No-Bake Hazelnut Crunch Bars!!
Place the hazelnuts and hemp hearts in the food processor and process until chunky. Add the agave nectar and puffed quinoa. Process until combined and balls up, about 5 – 10 seconds. Use a rubber spatula to scrape down the sides and process for another few seconds.
Line an 8×8 bread pan with parchment paper and transfer the batter on top. Use another piece of parchment paper or damp hands to press the batter into a single layer in the bottom of the pan.
Melt the chocolate in the microwave bowl for 2 minutes, stirring every 30 seconds.
Pour the melted chocolate on top and then sprinkle with chopped hazelnuts.
Pop in the freezer for 3 hours and then transfer to the fridge until you’re ready to cut into them.
No-Bake Hazelnut Crunch Bars
I am OBSESSED with these No-Bake Hazelnut Bars! They’re gluten free, vegan and completely delish! You can never go wrong with crunchy hazelnut + chocolate!
Ingredients
- 1 cup raw peeled hazelnuts
- 1/4 cup hemp hearts
- 1/4 cup agave nectar
- 1/2 cup puffed quinoa
- 1/2 cup dark chocolate chips
- handful of chopped hazelnuts
Instructions
- Place the hazelnuts and hemp hearts in the food processor and process until chunky.
- Add the agave nectar, puffed quinoa.
- Process until combined and balls up, about 5 – 10 seconds.

Never had hemp hearts until my last batch. Always used milled or ground flax seeds instead. Used hemp hearts (Whole Foods) in my latest batch. Still good but compared to flax, to me, the taste is not as good.
