Lately the two things I grab in the morning are my overnight oats and my cup of coffee. After going through all my favorite flavors of overnight oats I knew I needed to blend my two morning favorites.
What kind of coffee should I use?
I always have a cup of freshly brewed coffee a couple minutes away. Any coffee will work here whether you use that leftover coffee in your coffee pot, brew a quick k-cup or make a fresh americano with your espresso machine.
If you’re in a pinch, instant espresso is a great option! Instant espresso is full of flavor and is easily mixed with water or milk to serve as the liquid base.
What is the best milk to use for overnight oats?
My favorite milk to use for overnight oats is oat milk. Check out my recipe for homemade oat milk. I just love how creamy it is and it really hits home the whole oat thing. Honestly, it is completely personal preference.
Use dairy milk, homemade almond milk, soy milk, coconut milk, whatever milk you have on hand!

How to make Coffee Overnight Oats
Step 1: Add the ingredients
Add all the ingredients to a lidded jar. Any jar works here, you just want to make sure you have a lid that seals shut so you can complete step 2 without liquid droplets flying everywhere. My favorite jars are these Weck jars, but I’ve also been known to use leftover peanut butter jars or old plastic take out containers.
Step 2: Shake!
Next, make sure the lid is securely on and give your jar a good shake to incorporate the ingredients. This is pretty easy and they combine pretty easily.
Step 3: Wait
Once your ingredients are in the jar and incorporated, pop that jar in the fridge and wait at least 2 hours but they’re best after 12 hours.
Step 4: Eat your coffee overnight oats! 😋
Enjoy! Top with a sprinkle of brown sugar, a dollop of whipped cream or Greek yogurt or eat as is – they’re delicious!
Coffee Overnight Oats Variations
Mocha Overnight Oats: add a tablespoon of cocoa powder and an extra tablespoon of sweetener for a rich mocha flavor.
Caramel Latte Overnight Oats: Mix in some caramel sauce to the oats and add a drizzle on top with a sprinkle of sea salt for a delicious touch.
Pumpkin Spice Latte Overnight Oats: Is it autumn yet? If you’re craving pumpkin spice then mix a tablespoon of pumpkin puree, 1/2 teaspoon pumpkin pie spice, with all your overnight oats ingredients and top with whipped cream when you’re ready to dig in.
Brewed Coffee Overnight Oats with Oat Milk
Coffee overnight oats are made with freshly brewed coffee, sweetened with honey and a touch of vanilla. A tasty prep ahead breakfast!
Ingredients
- 1/2 cup freshly brewed coffee
- 1/2 cup rolled oats
- 2 tablespoons oat milk
- 1 tablespoon chia seeds
- 1 tablespoon honey, agave nectar or maple syrup
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
Instructions
- Add all the ingredients to a lidded jar.
- Make sure the lid is securely on and give your jar a good shake. You want to make sure the oats and coffee are incorporated.
