Baked Apple Cinnamon Oatmeal

Prep this Baked Apple Cinnamon Oatmeal for easy grab and go breakfasts! Such a deliciously gluten free and healthy recipe for the whole family!

My kids love oatmeal. Like, a lot. It’s almost an everyday occurance in our house and so I figured why not make a fancy shmancy version that doesn’t come out of a packet? WHY NOT? 

Why not make an oatmeal bake that is super autumn-inspired and I could prep ONCE a week and slice off squares for easy morning breakfasts? And so, I did. 

This is super customizable. You can use whatever milk you want, whether it’s whole milk or nut milk or oat milk. Or, sub in some pears or blueberries or whatever fruit you like! I like this as a breakfast, but you can honestly throw a scoop of ice cream on top of this and it’s a bomb autumn dessert.

So, let’s jump into this recipe and make this Baked Apple Cinnamon Oatmeal! If you like recipes that you can prep ahead and heat up for easy grab and go breakfasts, try this southwestern sweet potato egg bake, these hash brown breakfast egg cups, or these broccoli and cheddar egg muffins!

In a large bowl, whisk together the oats, milk, eggs, agave, peanut butter, hemp hearts, vanilla, baking powder, cinnamon, and salt. Fold in the walnut and apple pieces, saving a handful of each to sprinkle on top. 

Transfer the oatmeal to a baking dish. Sprinkle the top with the reserved apple and walnut pieces. Bake for 35 minutes until the top is golden brown and the center is set.

Allow to sit for 5 minutes before cutting into slices, or save for meal prepped breakfasts for the week! Before digging in, drizzle with additional peanut butter if you want!

Ingredients

  • 2 cups gluten free oats
  • 1 1/2 cup milk (whole milk, oat milk, almond milk, whatever you want!)
  • 2 eggs
  • 1/3 cup agave nectar, honey or maple syrup
  • 1/3 cup natural peanut butter, plus more for drizzling on top before you eat
  • 1/3 cup hemp hearts
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 3/4 cup chopped walnuts
  • 1 honeycrisp apple, cut in cubes

Instructions

  1. Preheat oven to 350F.

    This was SO GOOD! My 2-year-old and my husband, both of whom are picky eaters, also really enjoyed this. I’ll definitely be making this again for quick meal-prepped breakfasts for the whole family!
