Gluten free & dairy free! These are flourless and naturally gluten free and dairy free!
Ingredients for Lucky Charms Cookies
Coconut Sugar. If you don’t have coconut sugar, you can sub in brown sugar!
Eggs. Just two! I haven’t tested this with vegan eggs or flax eggs so if you do any experimenting, let me know how it goes!
Peanut Butter. Mm yes please! I love the peanut butter and marshmallow vibe of these cookies! I always go for natural peanut butter because the only ingredient is peanuts. Peanut butter with additional ingredients may mess with the consistency and texture of the cookies. If you don’t have peanut butter or can’t have peanut butter, sub in another natural nut or seed butter!
Vanilla Extract. Just a splash for some warm, cozy cookie vibes.
Salt. Just a pinch to bring out all those sweet flavors. If you’re using salted peanut butter, you can leave the additional salt out.
Lucky Charms. Yay! This is why you’re here, no? We’re using that delicious Lucky Charms cereal from your childhood. We’re going to sort the marshmallows from the cereal and use both 🙂
How to Make Lucky Charms Cookies
Mix the dough. Use an electric mixer to mix together the eggs and coconut sugar. Add the peanut butter, vanilla, and sea salt. Mix again until the batter turns thick and sticky.
Fold in the yummies. Add the cereal and marshmallows to the cookie dough and fold it in. Save some of the marshmallows to add to the tops of the cookies.
Make the cookies. On a lined baking sheet, use an ice cream scooper (for big cookies) to scoop six mounds onto the baking sheet.
Flatten the cookies. Get a small cup of water and dip a fork into the water. Use the wet fork to make a criss-cross imprint with the back of the fork on the top of the cookie dough balls.
Add more mallows. Press some more colorful marshmallows to the top of each cookie.
Bake and enjoy! Bake in the oven for 10 minutes and then transfer to a cooling rack. Enjoy!
How to Store these Cookies
These cookies are best served day-of. Keep them in an airtight container at room temperature for about 1 week.
I don’t recommend you store them in the fridge because it can change the texture of the marshmallows. But, you can keep them in an airtight container in the fridge for about 10 days.
Bring the cookies to room temperature by removing from the fridge and allowing them to come to room temperature. You can also pop them in the microwave for a bit to warm them but it may change the texture of the marshmallows.
Peanut Butter Lucky Charms Cookies
Lucky charms cookies have a sweet peanut butter base wit crunchy cereal and fun, colorful marshmallows throughout. Gluten free & dairy free!
Ingredients
- 2 eggs
- 1 cup coconut sugar
- 1 1/2 cup natural peanut butter
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 2 cups Lucky Charms cereal (1 cup marshmallows & 1 cup cereal)
- flakey salt for sprinkling on top
Instructions
- Preheat. Preheat the oven to 350F.
- Mix the dough. Use an electric mixer to mix together the eggs and coconut sugar.
