I ordered backyard patio furniture and waited patiently for it to arrive. One night, after I put the kids down for bed, I peeked out my bedroom window to see a truck stop in the middle of the street. Curious (and maybe a little nosy) I thought new neighbors were moving in and this was their moving truck. Naturally, I sat at my window sill and watched.
Within 30 seconds of watching this truck, I see a giant box tumble off the back and slam onto the street, wait a minute… that’s not some mover carefully unloading boxes for a new home… that’s our… that’s our patio furniture. A bit taken aback, I kept watching.
As I realize what is happening, I hear lots of banging around inside the truck followed by a second box tumble off the back and, shortly thereafter, a man holding a third box step out onto the back ledge and lock eyes with me. BUSTED. I almost wish I had it on video, Jaryd and I cracked up about it for hours.
If it wasn’t so hilarious, I’d be mad. Everything seemed to be packaged to withstand this particular delivery man, and all the pieces were in good condition.
The furniture set has been my morning happy place where I sip my coffee and eat my breakfast. It’s glorious and has seriously upped my morning routine. And, I supposed it’s upped my afternoon routine to because I take my laptop out there and do some work outside. And sip coffee, of course.
Breakfast that I’ve been obsessing over lately as I sit on my new patio furniture and sip my coffee? Sweet potato toast!! I love sweet potato toast because it’s a fun alternative to bread and you get an extra serving of veggies. Plus it’s a fun new flavor that is so versatile!
I’ve made a savory version of this before. And I love throwing some bacon and eggs on top for an all-in-one breakfast situation. Today, I’m giving some sweet sweet potato toast a go and loading it with ALL my favorites.
These are super simple and come together quickly. Plus, I love me a hot breakfast, so this is perfect! There are a few different ways to cook sweet potato toast, but my favorite way is to sauté it. I think it just adds a new level of flavor that I really enjoy.
I’m a big fan of sprinkles so when I come across a new favorite, you know I have to share. From as far back as I can remember, my favorite sprinkle is hemp hearts! I’m pumped Manitoba Harvest just came out with Toasted Hemp Seeds! They’re bigger and crunchy and they come in two flavors: sea salt and sriracha. Sriracha is PERFECT for my sweet potato toast with eggs and avocado. I loved the sea salt flavor to bring out my sweet and salty version.
So let’s make some Loaded Almond Butter Banana Sweet Potato Toast!!
Wash the sweet potato and cut it in ½” – 1” slices, lengthwise. Put ghee in a pan over medium-high heat. Add the sweet potato slices, flipping every minute or two until it’s softened and golden brown. Transfer to a plate lined with a paper towel to soak up extra ghee.
Top each sweet potato with almond butter, sliced banana, Toasted Hemp Seeds, Hemp Heart Toppers, and agave nectar. Easy as that!!
Loaded Almond Butter + Banana Sweet Potato Toast
Fun and delicious way to up your #toasttuesday game! This Loaded Almond Butter + Banana Sweet Potato Toast is such a tasty way to start your day!
Ingredients
- 1 large sweet potato
- 2 tablespoons ghee
- 1/4 cup natural almond butter (How to Make Super Creamy Almond Butter)
- 1 banana
- 2 tablespoons Manitoba Harvest Toasted Hemp Seeds
- 2 tablespoons Manitoba Harvest Maple and Cinnamon Hemp Heart Toppers (optional)
- Drizzle agave nectar (honey or maple syrup works)
Instructions
- Wash the sweet potato and cut it in ½” – 1” slices, lengthwise.
