Sweet Potato Pizza Bites
Want an easy party appetizer that’s guaranteed to be a crowd favorite? Try these gluten free Sweet Potato Pizza Bites!! They’re so easy to whip together!

Ok ok, now that Christmas has come and went, we are gearing up for New Year’s. It’s pretty crazy how quickly all the holidays are flying at me this year. Anyway, NEW YEARS! I figured we’re about due for a NYE party app that is easy enough to prep and a crowd pleaser (who doesn’t love pizza?!).

If you love little tostadas loaded up with lots of goodies that you could serve as an app. try these little sweet potato discs with thai pesto and avocado!! Omg, I just drooled in my mouth a little bit as I typed that. Also try these eggplant tostadas with hummus and a bunch of other good stuff on top! I also have these cut little single serve eggplant parms that will knock your socks off.

I need to know what are some of your favorite party appetizers? I’m not going to lie, I’m such a dip gal. I love an easy dip you can whip up in advance that aren’y too fussy about staying warm as guests trickle in. These Sweet Potato Pizza Bites are kinda no-fuss like a dip. Once you get them baked up, there’s not much else that needs to be done. You can serve them warm to your guests but they’re also pretty delish at room temp, so no need to keep reheating and reheating.

Plus, if you have some adventurous kid eaters in the party mix, these are the perfect little bite for them. I mean listen, don’t get me wrong, my kids would not be into the sweet potato base, but there are some less picky kiddos that would enjoy it.

So let’s jump into the recipe and make some Sweet Potato Pizza Bites!! Arrange the sweet potato slices on a baking sheet and drizzle with the olive oil and sprinkle with salt. Roast them for 10 minutes before flipping and roasting on the other side for 5 minutes.

After the 15 minutes is up, spoon about 1-2 teaspoons of sauce on each round and top with mozzarella cheese. 

Slide the baking sheet back into the oven and bake for an additional 5 minutes, or until the cheese melts. Top with basil and or herbs and serve!

Ingredients

  • about 4 medium sweet potatoes, sliced into ¼ inch thick rounds
  • 1 Tbsp. olive oil
  • ½ tsp. salt
  • 1 jar pizza sauce
  • 4 oz. mozzarella cheese 
  • basil and herbs for garnish

Instructions

  1. Preheat the oven to 400F. 
  2. Arrange the sweet potato slices on a baking sheet and drizzle with the olive oil and sprinkle with salt.

    I really liked these to satisfy my craving for sauce and cheese of a  real pizza when I’m trying not to eat so much  bread.  Very simple to make and if you think you won’t be able to eat the skin, you will be pleasantly surprised with the texture.  It’s very yummy.  Instead of drizzling the oil, I added the oil to the potatoes and tossed them evenly.
