I’ve had this spaghetti squash staring me down for over a month. I’ve moved it with me from our old house, to that month of bopping around to airbnb’s before our house was ready and finally brought it with us to our new home. It was sending me some major vibes.
And by major vibes I mean it was slowly developing “age spots” that if I let it go another week longer it may be questionable.
My favorite way to prep a spaghetti squash is to roast it in the oven. But, the thing is, that takes 40 – 60 minutes and there’s that small fact that I don’t currently have an oven. So, I looked around my little room that I’m using as an office and a kitchen and a dining room (ugh don’t get me started on this endless renovation) and met eyes with my Instant Pot.
I made it my mission to cook up my aged spaghetti squash in my Instant Pot so I could mix it with some marinara or pesto or basically anything. So let’s make a spaghetti squash in our Instant Pot! Cut the spaghetti squash in half. If you want longer stands, cut it in half lengthwise. For shorter strands cut it across the width.
Scoop out the seeds and discard them. Place the trivet in your Instant pot along with 1 cup of water. Place the spaghetti squash on top of the trivet and close the lid, setting the vent to “seal.”
Set the Instant Pot to high for 7 minutes. After the 7 minutes, turn the knob to vent. Once all the steam has released, use tongs or silicone mitts to remove the spaghetti squash from the Instant Pot. Place it on a cutting board or plate. Use a fork to pull the strands away from the outside shell of the squash.
