It’s popsicle season, y’all! I remember when Caleb was little, I funneled any leftover smoothies into popsicle molds and some magical thing happened. No matter what was in that smoothie, the moment it froze on a stick, he gobbled it up. Like I said, magic.
Let’s face it, popsicles are fun for all. They bring smiles to your face and refresh you on the hottest days. I envision a lot of popsicles will be made in my kitchen this summer, and I’m kicking it off with these blueberry parfait popsicles.
Dessert? Check! Breakfast? Check! After school snack? Meh, why not. These are only a handful of ingredients and perfect for any time of day. So let’s make some Blueberry Parfait Popsicles!
Place the blueberries, yogurt, agave nectar (honey or maple syrup works) and almond butter in your food processor. Process for about 15 – 20 seconds. Use a rubber spatula to scrape down the sides and process again for 5 seconds to get everything combined.
Pour into your popsicle molds, leaving about 1/2 inch from the top.
Finish them off with some grain-free granola (totally optional but adds a fun crunch). Place the sticks in and freeze for a few hours.
Blueberry Parfait Popsicles
Delicious and refreshing Blueberry Parfait Popsicles that are only a handful of ingredients and are guaranteed to bring the smiles.
Ingredients
- 1 cup blueberries
- 2 cups whole milk plain yogurt
- 1/4 cup agave nectar
- 3 tablespoons natural almond butter
- 1/3 cup grain free granola
Instructions

We made these today. It was fun and they are tasty! We didn’t have almond butter but I did have a jar of hazelnut butter (!!) and so we used that and some honey as a substitute.
