The other day I took my son out to get donuts. There’s this donut shop by us that always has a line out the door. But on that day… we got there early.
Ok, there was still a line, but it was only 7 people or so and it definitely wasn’t out the door, so I felt like we were ahead of the game. I got a cinnamon sugar donut that was out of this world delicious.
It was cakey and fluffy and had that sugary crunch on the outside. I waited minutes between each bite so that I could fully savor it. And, if you know my affinity for eating everything immediately, you will know this must have been a particularly special donut.
I decided that my own version of those cinnamon sugar donuts need to happen again. I tried a few variations of this donut recipe. The first variation turned out to be donuts but with a muffin top which was fun… we called them donuffins. The second try were dry and crumbly and inedible. And, on the third try… as many third tries have before… the third try was a charm. Today I present to youuuu Cinnamon Sugar Donuts.
Simple. Sugary. Moist. Fluffy. Delicious.
Ingredients for this cinnamon donuts recipe:
- eggs
- coconut sugar
- refined coconut oil
- vanilla
- blanched almond flour
- baking soda
- salt
- cinnamon
How to make these cinnamon donuts:
Whisk together the eggs, coconut sugar, coconut oil, and vanilla. Once smooth, add the almond flour, baking soda, salt, and cinnamon. Whisk until it’s combined.
Transfer the batter to a plastic baggie, seal it, and cut off one corner.
Place the silicone donut pan on a baking sheet. I switched to a silicone donut pan because I found the donuts were easier to remove after the cooked. Spray your donut pans with your favorite cooking spray. I like a coconut oil spray, but any spray works.
Squeeze the batter out of the bag in a circular motion around the donut shape. Tap the pan to get the batter to flatten a bit and all the air bubbles to pop.
Bake for 15 minutes. After 15 minutes, allow the donuts to cool in the pan for 5 minutes to make sure they’re set before transferring them to a cooling rack.
Want that cinnamon sugar topping? In a shallow dish, mix together 1 tablespoon coconut sugar with 1/2 teaspoon cinnamon. Dampen your hands and slightly wet the top of the donut. Place the dampened top upside down into the cinnamon sugar and twist to coat it. Continue this until the donuts are coated as you like.

Ingredients
Donuts:
