I’m on an overnight oats kick. I know, I’m about five to ten years late to the game but better late than never, no?
My absolute favorite overnight oats recipe is this Biscoff cookie butter version I’m sharing today. It’s basically like eating a cookie with each bite. I cannot get enough of it.
Once I started up the overnight oats habit again, I went through my usual rotation of peanut butter, 3 – Ingredient Nutella Overnight Oats without Chia Seeds, 4-Ingredient Creamy Chocolate Overnight Oats and Easy Banana Overnight Oats.
But, when I grabbed for a jar of cookie butter in the store a lightbulb immediately popped above my head. A scoop of this needed to be in my overnight oats asap. And, ever since I first started making my overnight oats with Biscoff butter, I haven’t been able to switch it up. It’s been Biscoff overnight oats on repeat and I’m not complaining. This recipe is just too good.

Ingredients for Biscoff Overnight Oats
Oats
Oats soften and absorb liquid overnight, creating a creamy texture. Old fashioned rolled oats are the best to use here. Make sure they aren’t “extra thick” oats, steel cut oats or instant oats as that will change the overall texture.
Oat Milk
Oat milk adds creaminess to the oats without the need for dairy, making it a great option for those looking for a dairy free option. But, this recipe works with any kind of milk so feel free to sub in whatever you have on hand!
Chia Seeds
Chia seeds absorb liquid and swell up, creating a gel-like consistency that thickens the oats and makes it even more satisfying and hearty.
Cookie Butter (like Biscoff)
Cookie butter adds indulgent flavor to the oats, reminiscent of spiced cookies with a hint of caramel. It transforms the oats into a delicious, indulgent-feeling breakfast.
Agave Nectar
Agave nectar adds extra sweetness to the oats. Honestly, it’s optional because cookie butter is sweet in and of itself but I’m all about making these oats extra indulgent and a touch of agave nectar does just that. If you don’t have agave nectar, you can use honey or maple syrup.
How to Make Biscoff Overnight Oats
Combine Ingredients in a Jar
Grab a jar with a secure lid, preferably a mason jar or a container specifically designed for overnight oats. I love using these Weck jars! Start by adding the oats to the jar. Follow with the oat milk, pouring it over the oats. Then, spoon in the chia seeds, cookie butter, and sweetener.
Secure the Lid and Shake
Once all the ingredients are in the jar, securely fasten the lid. Make sure it’s tightly sealed to prevent any leaks. Hold the jar firmly and give it a good shake to combine all the ingredients thoroughly. The shaking action helps distribute the flavors and ensures that the oats, chia seeds, and cookie butter are well mixed with the liquid.
Refrigerate Overnight (or at Least 2 Hours)
After shaking, place the jar in the refrigerator. Ideally, let it chill overnight to allow the oats and chia seeds to fully absorb the liquid and soften. However, if you’re short on time, you can refrigerate it for at least 2 hours, though the texture may not be as creamy as if left overnight.
Stir Before Serving
When you’re ready to enjoy your overnight oats, remove the jar from the refrigerator. Give the oats a good stir with a spoon to incorporate any ingredients that may have settled at the bottom. This ensures an even distribution of flavors and textures throughout the oats.
Enjoy!
At this point, feel free to customize your overnight oats to your liking. You can add toppings such as fresh fruit, nuts, seeds, or additional sweeteners if desired. Once you’ve personalized your oats, dig in and enjoy your delicious and nutritious breakfast!
Variations on these Biscoff Overnight Oats
Biscoff Banana Overnight Oats
Add sliced bananas to the jar before refrigerating. The combination of Biscoff and bananas creates a sweet flavor with a hint of natural sweetness from the fruit.
Chocolate Biscoff Overnight Oats
Stir in a tablespoon of cocoa powder or chocolate chips to the oat mixture before refrigerating. The addition of chocolate adds an extra layer of decadence.
Biscoff Berry Overnight Oats
Layer fresh berries, such as strawberries, blueberries, or raspberries, with the Biscoff oat mixture in the jar before refrigerating. The tartness of the berries complements the sweet and spiced flavor of the Biscoff, adding a burst of freshness to each bite.
Biscoff Espresso Overnight Oats
Stir in a shot of espresso or a tablespoon of instant coffee powder to the oat mixture before refrigerating. The addition of coffee enhances the depth of flavor in the oats and provides a subtle caffeine boost to kickstart your morning.
How to Store Biscoff Overnight Oats
Seal the Container Tightly: Securely fasten the lid on the container to create an airtight seal. This helps prevent air from entering the container, which can cause the oats to dry out or absorb unwanted odors from the refrigerator.
Store in the Refrigerator: Place the sealed container of overnight oats in the refrigerator.
Mix Before Serving: When you’re ready to enjoy your overnight oats, give them a good stir with a spoon or fork to redistribute any ingredients that may have settled or separated during storage. This ensures an even distribution of flavors and textures in each serving.
