Welcome to The Toasted Pine Nut! Yes, I know, another food blog. Blah blah blah. But wait!! This one is different… I promise!
It’s been a long journey getting to this point, but here are the cliff notes:
I met my husband in college. I was 18 at the time. Yes, basically a child. It was love at first sight… for him 🙂 I, on the other hand, rejected his advances, rolled my eyes at his jokes, and, found him to be kind of obnoxious. Then one fateful day, he made me laugh. The rest is history.
Jaryd enjoys eating salad. He never misses his morning run. He has a 20 story threshold before he even considers taking an elevator. I, on the other hand, am a “Why yes, I’d love a second piece of cake” kind of girl. Shortly before our first wedding anniversary my husband was diagnosed with Type 1 Diabetes. The diagnosis changed both our lives.
At first I oscillated between 1) trying to cook crappy low carb recipes and pretending I enjoyed it, and 2) making two separate meals. Then I began doing research, reading recipes, and really trying to find something we could both eat and love. Easier said than done. There were a lot of epic fails, but I began to collect the random good recipes and alter others to make them low carb. Sometimes I just wing it and it turns out awesome. Sometimes not. I want to share my experiences with you. I want cooking healthy (and low carb) to be easy for people. I want to be a resource where people can be guaranteed delicious, low carb, healthy recipes.
So here’s the thing. As I began to eat healthier I noticed a difference in the way I felt and how I view food. To me, changing the way I eat is a life choice. I choose to make meals that are healthy and I choose to eat foods that make me feel good. Most importantly, I choose to make meals that my husband and I can sit down and enjoy together. Don’t get me wrong, I still eat cake. I just usually eat kale first.
