To me, fall and winter is all about the slow cooker. You know, that set it and forget it kitchen gadget you registered for but haven’t yet pulled out to break it in? That was me.
I got a slow cooker for my wedding. I was eager to use it but never really knew where to start. AND, I never really had the forethought to set it hours before we were ready to eat. So, I tucked it away only to be pulled out a few years later with a renewed sense of determination.
Today we are making a Slow Cooker Apple BBQ Chicken which is absolutely perfect for an easy weeknight meal or weekend gathering. People can assemble their own sandwiches or bowls loaded with quinoa and greens and roasted veggies. It’s one of those recipes that you can serve to a bunch of people and offer different ways of consumption.
People often ask me if my kids eat the same food as me, and this is the perfect example of how we make it work. I’ll make this slow cooker shredded bbq chicken, give it to them smushed between some potato buns and serve some veggies and fruit on the side. J and I, on the other hand, will put it on top of a salad or bowl, or fold it up in a wrap. So, yes they eat the same thing as us, but in different forms.
So let’s make some Slow Cooker Apple BBQ Chicken! Place the chicken, BBQ sauce, apple cider, apple cider vinegar and apple pie spice into a slow cooker and turn to heat for 4-5 hours.
After the chicken has cooked, remove it from the pot and shred.
Take the sauce and pour it into a small saucepan and cook over medium heat until it has reduced by about half. Taste the apple BBQ sauce and add salt as desired. This will vary depending on the BBQ sauce you use.
Pour the sauce back over the shredded chicken and serve in sandwiches, tacos on salads or whatever you want.

- 1 and 1/2 lbs. boneless, skinless chicken breast
- 1 cup BBQ sauce of choice
- 1/2 cup apple cider
- 2 Tbsp. apple cider vinegar
- 1 pinch apple pie spice
- salt, to taste
