The green beans so nice I made them thrice. I have no desire to make regular green beans ever again. Ever. Well ok, mayybe I’ll make them again. But definitely not before I make these cheesy ones. They were bomb. And if I do make plain ol’ regular ones again I feel like I’ll just be pining for these cheesy ones. I had to slap Jaryd’s hand away from eating them all. Save some for me dammit! What about the children?!!

Apparently if you want everyone in your family to eat green beans, put cheese on them. Er, to be completely honest Caleb ate one bite, but it totttally counts. Like he bit it with his little chompers and ingested one bite of green and I am doing a happy dance. It. Counts. 

These are savory, parmed green beans that are so good and addicting. I could even eat these as a snack during the day. It’s like a side dish that stands on its own. They are totally perfect for grilling season, pile them high next to (or ON!!!?) a burger for easy and healthy french fry replacements. I should probably double the recipe next time I make it because. Because. It left us wanting like ten million more. 

So guys. It’s warm outside. Spring has sprung. Yesterday, I wore shorts. Today too. My legs are totally pretty ghostly and I need to get back into that shaving/moisturizing thing again. Grr. Also totally forgot that I’m a sweat monster but I promised winter that I wouldn’t complain about the heat so long as winter gets the heck outta dodge. So if you see me all sweaty, you can thank me. It’s for the greater good. 

Also! I won something!! I like entered a giveaway and won! The only things I’ve been “winning” lately are on ebay and that’s because I offer to pay the most. But, they tell me I won, soooo…

Like seriously when I got notice that I won this giveaway, I got a bit teary eyed! These past few weeks have been soo so difficult with all the illnesses that mama really needed a pick me up. It’s a box of goodies, so I’ll keep you posted on what is in the box! I’m so psyched, I can’t even tell you! (update: eyeball the giveaway goodies here).

But! Back to business! These are so so simple you really need to make them!! Let’s make some Garlic Parmesan Green Beans:

First, whisk all the ingredients together.

Add the green beans…

…and toss until they are well coated.

Then add the cheese and gently toss until the cheese sicks to the green beans. Spread them on a lined baking sheet so they are a single(ish) layer.

Pop them in the oven an cook for 15 minutes. Then, broil for an additional 2 minutes to crisp them up a bit more.

Garlic Parmesan Green Beans

  • Prep Time: 10

Ingredients

  • 2 T. coconut oil, melted (any cooking oil works)
  • 3 cloves garlic, minced
  • 1 egg, beaten
  • 1/2 t. sea salt
  • 1/2 t. paprika
  • 12 oz green beans
  • 1/3 cup Parmesan cheese, grated

Instructions

  1. Preheat oven to 425F.
  2. In a large bowl whisk the oil, garlic, egg, salt, and paprika.
  3. Toss in the green beans and coat well.
  4. Sprinkle in Parmesan on the green beans and toss gently.
  5. Transfer green beans to a lined baking sheet, sorting them to be a single layer across the sheet.
  6. Bake for 15 minutes or until golden.
  7. Broil on high for 2 minutes to make crispy.


Notes

  • I’ve used shredded and grated cheese and grated definitely is the better choice!
