Soo you guys hear about this new cauliflower pizza crust craze? It’s like this whole thing that’s going on. I see at least a handful of cauliflower crusted pizzas each night in my newsfeed. Maybe it’s the whole30 trend, but I kind of love that people are exploring (and loving) new ways to eat veggies!! After a few attempts dorking around with my own cauli crust recipe, I think I finally have come up with one you’ll hands down love.
This is what I love most about this cauli crust recipe: You know how when you eat pizza you can hold it in one hand? You take a bite and it’s still in tact, in that hand. The other recipes I’ve made are a bit flimsy, or fall apart in one bite, or worse, you need a fork. I’ve slowly tweaked this recipe and I loove the final result. The best yet.
So, you can top this with whatever you want! If you’re more traditional, go for the marinara, cheese, and pepporoni. If you want to get a little crazy, throw some pear and blue cheese on top. Whaaaa? Yerp! Mine? I chose sausage, sweet potato, kale, and Gruyere cheese. You might want to go get a napkin for your drool.
Chop the cauliflower into florets and process in the food processor until extra fine, you may need to do this in a couple batches. Place the processed cauliflower in microwave safe bowl and cook in microwave for 4 minutes. Allow to cool for a few minutes. Put the cauliflower in the center of a cheese cloth or tea towel, gather the ends, and squeeze out excess moisture from the cauliflower.
Combine all crust ingredients in a bowl: squeezed cauliflower, spices, egg, cheeses.
Form a pizza crust on your parchment paper lined pan. Keep crust about 1/4 – 1/2 inch thick (the thinner the better!). Brush the edges with some olive oil and bake in the oven for 15 minutes.
To get the center browned, broil on high for 2 minutes. Remove the crust from the oven and top with your favorite things.
Bake for another 10 minutes.
Cauliflower Crust Pizza
Delicious low carb and gluten free cauliflower crust pizza that is so easy and perfect for a lightened up weeknight favorite.
Ingredients
Crust
- 1 small head cauliflower
- 3 eggs
- 1/4 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon basil (dried)
- 1/4 teaspoon oregano
- 1/2 cup parmesan, shredded
- 1/2 cup mozzarella, shredded
- 1 tablespoon extra virgin olive oil
Toppings
- 1 cup pizza sauce
- 1 cup mozzarella
- 1/4 cup pepperoni
- handful of basil leaves
Instructions

What if you do not own a microwave oven – how would I hear the cauliflower mash up?

Hi Stacie,
Thanks for the question! You can steam the cauliflower for a few minutes before you throw it in the food processor. Just make sure not to over-process so that it doesn’t turn into mash. Let me know how you make out!!

I made it into rice and then I put it into previously boiled water, covered it and left in the water for about 5 minutes. Then I transferred the rice into a strainer and left it there to cool down a bit and to let the gravity remove a significant part of the water. Then i put it in a cloth and removed all the remaining water. Excellent results!

The cauliflower pizza crust at Trader Joe’s is my favorite savory item there! It still boggles my mind that the crust is vegan. AMAZING, right?! However, I do love homemade recipes even more. This cauliflower pizza crust would probably be such a crowd pleaser! Then again, I personally am not much of a pizza sharer… 😉

Aw I’m so sorry to hear about his diagnosis. I hope you find some tasty recipes! I don’t have a brand that I always use, but we’ve been loving this homemade pizza sauce! It has some low glycemic sweetener in it so is probably better than others that have “real” sugar. Plus, you can control the saltiness of it as well. Let me know how you guys like it! xo
