Ok true story. In high school my mom perfected a chicken salad recipe and used to pack it in my lunch. The recipe was based off a cafe we used to go to and it was my favorite chicken salad EVER. She’d pack it in my lunch on this nice, hearty bread. Welp…Â It never made it to the lunch table.
In actuality, I’d eat it on the way to school on the bus. Why? I don’t know, it was just so good I couldn’t wait. Impulse control at its finest, my friends 🙂
I’ve been meaning to pop this recipe up on the blog and I’m glad to finally share it! You can custumize how creamy you like it. I’ve always been a mayo freak so the recipe is to how I like it, but you can scale it back 🙂
Throw this on top of a salad, in a sandwich or wrap, even a collard green wrap would be crunchy and delicious.
So let’s make my favorite chicken salad EVER!!
Place the chicken breasts in a casserole dish. Pour the heavy cream over the chicken and bake it for 30 – 35 minutes.
Once the chicken is done, let it cool. Cut it into cube and place them in a large bowl. Add the walnuts, sliced grapes, sour cream and mayo. I like it super creamy and dreamy, so you can decrease the mayo/sour cream measurements if you want it a bit more naked 🙂
Scoop it on top of your salad or in your sandwich and you’re good to go!
The Best Chicken Salad
The best chicken salad ever!! I love the grapes and walnuts, it is such a decadent and delicious recipe!
Ingredients
- 1 lb. chicken breast
- 1 cup heavy cream
- 1 cup walnuts, chopped
- 1 cup grapes, sliced in half
- 1/2 cup mayonnaise
- 1/2 cup sour cream
Instructions
- Preheat oven to 350F.
- Place the chicken breasts in a casserole dish.
- Pour the heavy cream over the chicken and bake it for 30 – 35 minutes.
- Once the chicken is done, let it cool.
- Cut the breasts into cubes and place them in a large bowl.
- Add the walnuts, sliced grapes, sour cream and mayo. I like it super creamy, so you can decrease the mayo/sour cream measurements if you want it less.
- Scoop it on top of your salad or in your sandwich and you’re good to go!
