So I’m not one to start blog posts with a quote, but this one is too appropriate not to share. Julia Childs once said, “I enjoy cooking with wine. Sometimes I even put it in the food…” Same, Julia. Same.
This is one of those recipes you make as you sip your favorite wine, then pour some into the recipe, then sip some more. A few weeks ago I went up to an event at The Mighty in LA with The Feed Feed and got to eat really delicious food paired with really delicious Austerity Wine.
The night was super fun because not only did I get to, um, get out of the house (ha!) but I got to make new food blogger friends, eat the good food, and drink the good wine. What more do you need, really?
The space and table settings were gorgeous. I’m including some pictures so you can really get a feel for the vibe. It was fun.
While typically I’m a red wine gal, except in public when I exclusively drink white wine for fear of my pretty legit red wine teeth, I love to cook with white wine. I thought the Austerity’s Chardonnay would be perfect for this decadent creamy chicken dish that I’ve been dreaming up.
This recipe feels super indulgent, only dirties one pan, and comes together in 40ish minutes. It’s heaven.
AND! It has one of those sauces you’ll be fighting over. One of those sauces that you’ll want to slurp with a spoon. One of those sauces that makes you want to make this recipe on repeat because daaang you’re still thinking about it. You know what I’m talking about!
Now that I’ve sufficiently hyped this One Skillet Creamy White Wine Chicken, let’s make it.
Heat 1 tablespoon of butter in an ovenproof skillet over medium-high heat. While the skillet is heating up, generously sprinkle the salt, pepper, and paprika over both sides of the chicken thighs. You can also use chicken breasts for this recipe, I’m just partial to dark meat and find chicken thighs to be super forgiving, whereas breasts tend to dry out quicker.
Sear the chicken thighs for about 3 minutes per side, until golden brown. Transfer the chicken to a plate and set aside. Turn down the heat to medium and add the remaining two tablespoons of butter to the skillet. Add the minced garlic and cook for about 2 minutes until fragrant, stirring frequently. Add the chardonnay, cream, and parmesan.
Whisk the mixture until creamy and begins to bubble. Add the chicken back into the skillet and transfer it to the oven. Cook for 30 minutes. Sprinkle with chopped basil or full basil leaves and enjoy!
One Skillet Creamy White Wine Chicken

Ingredients
- 3 tablespoons butter, divided
- 1 lb. chicken thighs
- Salt and pepper
- 1 tablespoon paprika
- 3 cloves garlic, minced
- ½ cup Austerity Wines Chardonnay
- ½ cup heavy cream
- ⅓ cup shredded Parmesan
- Basil leaves for garnish
Instructions
- Preheat oven to 400F.
