Who all loves matcha?! Me me! It took me a while to warm up to matcha. When I first came across matcha I bought it randomly, drank it straight, and wasn’t quite sure. At first I thought maybe I’m not a matcha person. But then I started to experiment a bit. I’m not a quitter!! I think it’s all about finding the right mix of flavors, the right brand, and the right recipe.
While I’ve enjoyed matcha lattes using coconut milk, I’ve been dying to try some yummy treats and push my matcha boundaries a bit. Plus, I never knew what brand would give me the best, most consistent quality, and so I’ve always held off diving in the matcha pool.
Then I came across Motion Matcha and couldn’t be more obsessed. To begin with, they come in different flavors (orange vanilla, pomegranate berry, strawberry lemonade, and plain traditional matcha) which is SO up my alley. Plus, I knew I was getting consistently high quality matcha. But wait, there’s MORE! They also come in single serve packets so the whole process is easy and seamless. Rip it open, shake it up, and consume!
I don’t know about you, but when I come across a blog or brand, one of the first things I do is to check out their “About Me” section. I love to learn the story behind brands and find where the passion started.
I started talking to Jess from Motion Matcha and her story was a lot like mine. She and her fiancé Erik found something they loved and decided to make a go of it. Plus, they’re adorable.
Having an eye for all things health and wellness, Erik began drinking matcha and loving it. Being the amazing and fun fiancé that she is, Jess decided to give it a try only to find out she wasn’t as enthusiastically jumping on the matcha bandwagon as quickly as Erik. Determined to have a joint love for matcha, they found a way to satisfy both their matcha needs and ended up making naturally flavored and delicious single serve packets of matcha. Perfection.
From determined experimentation (they tried over 100 different recipes to come up with the 3 flavors), Motion Matcha was born. Motion Matcha is built on the notion that positive momentum and starting your day off right is key, I can totally get behind this – my morning sets the tone for my day. But, Motion Matcha also back the idea that matcha should be the forefront of moving in the right direction, whether it be personally, spiritually, through health and fitness, or financially. AND as if you needed any more inspiration, here’s the first shipment Jess and Erik got of their Motion Matcha. An experiment turned into an idea, turned into reality. And now that reality takes up half their living room.
I had a million different things I wanted to make with these matcha packets. Probably the hardest for me was not making myself a coconut milk matcha latte (recipe DEFINITELY coming soon), but I knew I wanted to make you guys a really fun, EASY, and yummy recipe, so I held off.
When my sweet tooth hits, it usually hits hard and fast and I can’t stand waiting for things to bake. Apparently I’m also super impatient when it comes to sweets. Eek! I love having no bake desserts waiting for me in my fridge. Plus, each truffle is so rich and filling, you only need one!
I’m loving the matcha flavor combined with the pistachio crunch, and obviously the chocolate topping. Plus matcha gives you a calm alertness that, in my opinion, is perfect for that afternoon slump. So pack a couple of these in your work lunch, share with your friends, and be the most beloved matcha truffle sharer in all the land 🙂
 In a large bowl, whisk together the melted coconut oil and agave nectar.
Whisk in the matcha until combined and green.
Add the almond flour, using a spatula to mix everything together.
Finally, fold in the pistachios, reserving a few tablespoons for topping.
Roll the batter into balls somewhere between the size of a large marble and a ping pong ball.
Dip each matcha ball into the melted chocolate and place it on a lined baking sheet. I loved the look of just dipping the top because that beautiful green peeks out from the bottom.
Sprinkle some chopped pistachios on the top. You want to sprinkle before the chocolate hardens, so dip about three and then sprinkle.
Pop the truffles into the freezer for about 20 minutes. I like them best chilly, but not frozen through. Store in the fridge until ready to eat!
Matcha Pistachio Truffles
If you’re a matcha lover, these no bake, gluten free, and vegan matcha pistachio truffles are your new favorite!! You’ll love how easy and fun these are!
Ingredients
- 1/2 cup extra virgin coconut oil, melted
- 1/4 cup + 2 tablespoons agave nectar (or favorite liquid sweetener)
- 1 Motion Matcha packet (I used Orange Vanilla)
- 2 cups blanched almond flour
- 1/2 cup pistachios, shelled and chopped
- 1 cup 60% cacao dark chocolate chips, melted
Instructions
- In a large bowl, whisk together the melted coconut oil and agave nectar.
- Whisk in the matcha until combined and green.
- Add the almond flour, using a spatula to mix everything together.
- Finally, fold in the pistachios, reserving a few tablespoons for topping.

Hello! I made these matcha bites and used coconut flour instead. They came out SO dry. I added butter AND water and they are still a crumbly mess! Is blanched almond flour more moist than coconut flour? I didn’t realize using the coconut would make them turn out so unrewarding! Tips? Tricks?

Aw bummer about the coconut flour! Yea, it’s typically dryer than nut flours. I tend to not use it in my recipes or only use a few tablespoons of it because it’s so dry and I don’t love the texture. Hopefully you’ll love them when you try them with the nut flour! xo
