A shamrock shake is a minty bright green milkshake. And, I had low expectations. A minty milkshake wasn’t my first choice dessert. I usually go for cookies’n cream or peanut butter swirl or even traditional vanilla. But today, I took one lick of this shamrock shake and I was disappointed in myself for waiting so long to try a minty milkshake. Why was I so stubborn? Why was I so stuck in my ways?

Guys, if there’s one takeaway from this blog post (I mean, besides the deliciously refreshing and minty recipe), it’s that you shouldn’t judge a shake by its bright green color. You should always give try a sip.
So, let’s make a delicious HEALTHIER shamrock shake. I made my shake with regular ol’ ice cream, but feel free to grab your favorite vanilla gelato, cashew ice cream, or coconut ice cream. You could even scoop out canned coconut cream into your ice cube tray and freeze it. .
Place the ice cream, baby spinach, agave nectar (honey or maple syrup works if you prefer), vanilla extract, and peppermint extract. Blend that baby up until completely smooth and green and milkshake-y..
I topped mine with some whip cream! I know WholeFoods has a coconut whip cream if you’re trying to make this dairy free, or try making your own with my coconut whip cream recipe. If you are making your own, it’s SUPER DE DUPER important your coconut cream is chilled. Otherwise, it tends to curdle.

Ingredients
- 3 cups vanilla ice cream
- 1 cup packed baby spinach
- 2 tablespoons agave nectar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract

- Blend until completely smooth and green and milkshake-y.

I have this coconut milk no sugar added vanilla bean ice cream in my freezer, plus I know where to purchase REALLY inexpensive spinach and add a little bit of peppermint extract. Now I’m going to make a chocolate shamrock shake–it’ll be SUPER DUPER exciting and I can’t wait to indulge in a healthy treat!
