There is some mugginess happening, you guys. What gives?! I thought California was supposed to be all about that dry heat. You know, that anti-humidity, no frizz kinda life. Well apparently Cali decided to keep us on our toes.
I’ve been in the kitchen cooking, sweating, cooking sweating. My kids have a constant stick to them. I’m sorry guys, I’m not normally like this. I’m not normally this complainy. Snap out of it, Lindsay.
Yesterday I was sitting in the kitchen and wanted something that was light and refreshing and utterly delicious. I chopped a bunch of veggies, threw it in a bowl and couldn’t be more obsessed.
GUYS!! First this is the perfect summer salad. Refreshing and no heat needed. Second, I love how versatile this is! It makes a really great side, or throw it on TOP of things as a fun cucumber salsa. Top your salmon with a few scoops of cucumber salsa and it makes a fresh and delicious meal! Seriously this is so delicious and brings the partaay.
Chopped Cucumber Salad
Make this refreshing and delicious Chopped Cucumber Salad for a tasty summer side. It’s whole 30, paleo, and also makes for a fun cucumber salsa!
Ingredients
- 1 cucumber, chopped
- 1/2 red onion, chopped
- 1 tomato, chopped
- 1 lime, zest + juice
- 2 tablespoons extra virgin avocado oil
- 1/2 teaspoon sea salt
- 1/2 jalapeƱo, chopped
- handful cilantro, coarsely chopped
Instructions
- Place all the ingredients in a bowl and mix it all up!

Ooh, I love cucumber salads! They always taste so fresh and delicious. Heck, you can have it on a toasted flatbread and it would be amazing!
