I got a wok, I got a wok!! I’ve never had one before, I’ve never used one before. So, I decided to make a lo mein. Noooot really sure what else to make with my wok besides a lo mein. Suggestions welcome 🙂
This is packed with veggies, is so delicious and fun to eat! It also reheats really amazing and can make for a really tasty meal prep situation.
So, without further adieu, let’s make some tasty 20 minute(ish) sweet potato noodle lo mein! It’s so easy, so flavorful, and bound to be your new favorite weeknight meal.
In your wok (ok any pan or skillet will work), heat a tablespoon of avocado oil over medium high heat. Add the chopped onion and peppers to the wok. At this point, if you want to add any other veggies like Brussels, green beans, snow peas, you can throw them in too.
Stir the veggies frequently until the onions are caramelized, about 10 minutes. Add the garlic and chicken and cook for a few minutes. Add the sesame oil, soy sauce, agave nectar, fish sauce, and ginger. Continue to cook for few minutes until the chicken is cooked through.
Add the sweet potato noodles. Toss them frequently with tongs for about 5 minutes until softened but still crunchy. Top with cashews, chopped mint, and sesame seeds.

- 1 tablespoon agave nectar (honey or maple syrup works)
- couple dashes of fish sauce
- 1 teaspoon freshly grated ginger
- 1 large sweet potato, spiralized blade C
Instructions
