Probably my favorite pizza to get out is BBQ chicken pizza. It’s my standard, go-to slice. I love the sweet and tangy sauce, the cheese, the whole shebang. I thought, “What if I healthify this?!” And by healthify I mean keep the cheese and BBQ sauce (obviously), but add some nutty crust that resembles one of those fluffy, doughy, pizza shop slices.
California update for allllll those inquiring minds. We are moving to Cali!! Woot woot!! Sooo incredibly excited about it! We hooked up with a realtor who will hopefully find us a place to live in the next month or so. Either way, whether we find a place or live in a motel for a couple weeks, we’re heading west in July. Eeek!! It still doesn’t seem real!
All my California peeps, let’s be friends!! 🙂
But seriously, though. Be my friend?
Oh right, pizza. You’re here for the pizza. What? What about meee? I’m cool too!! I mean, I’m okay. I have cool moments… like 10 years ago… 😉
PIZZA!!
Ok, I need to do the true test and make this crust with some regular ol’ pizza sauce and cheese and see if it passes the toddler test. What do you guys think? Maybe that will be my weekend plan 🙂
So here’s how you make BBQ Cauliflower Pizza:
Mix up your crust by whisking together the egg whites, coconut flour, almond flour, baking powder, sea salt, onion powder, and garlic powder in a bowl.
If things look clumpy (like the pic above), just keep whisking, only a little harder and faster until everything is well combined and sticky looking (like the pics below).
Place in the fridge until you’re ready to use it.
In a large bowl, combine your cauli florets, coconut oil, garlic powder, and BBQ sauce.
Toss until the cauli is well coated.
Place the cauliflower on a lined baking sheet and roast in the oven for 20 minutes.
When it is done baking, place in a bowl and set aside.
Get new parchment paper to line the pan. Use a spatula to evenly spread the dough mixture into a circle. You want it to be 1/2 an inch thick or less.
The texture of the dough won’t be like typical flour dough. It’ll be sticky and more like batter. Trust me on this, it’s delicious!
Once the dough is in the perfect form, brush it liberally with olive oil.
Bake it for 20 minutes.
Remove the crust from the oven, sprinkle on the cheese, and spread the cauli on top. Drizzle an additional couple tablespoons of BBQ sauce on top of everything.
Brush the crust edges again with olive oil and sprinkle with sea salt.
Bake for another 10 minutes.
Remove the pizza and let it sit for a couple minutes. Sprinkle with arugula and cut into slices!

Holy moly. This looks SO FREAKING TASTY! I’m definitely making this next week and then probably going to bombard you with tweet love about the outcome!
Would you be able to make any recommendations of alternatives to the almond flour? I’m allergic to nuts 🙁 I’m allowed coconut.
Very excited about this 🙂 Thanks for sharing.
