Strawberry Bruschetta Avocado Boats

Light and delicious Strawberry Bruschetta Avocado Boats are the perfect summer recipe that are bound to take your backyard bbq up a notch!

  • 5 strawberries, washed and cut in 8ths
  • 8 small mozzarella balls, cut in fourths
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon white balsamic vinegar
  • 1/4 teaspoon sea salt
  • 1/2 lime, juiced
  • 1 tablespoon mint, chopped
  • 4 avocados, halved and seed removed1/8 cup pine nuts, toasted


  1. Place the cut strawberries and mozzarella in a bowl.
  2. Add the olive oil, balsamic, salt, lime juice and mint and toss.
  3. Cut the avocados in half and remove the seeds.
  4. Scoop a deeper and wider center hole if desired.
  5. Plate the avocados and spoon the strawberry mixture into the center.
  6. Top with toasted pine nuts and additional chopped mint.
  7. Serve with a spoon!
