Ingredients
- 2 eggs
- 2 tablespoons agave nectar
- 2 tablespoons refined coconut oil
- 1 cup blanched almond flour
- 1/8 cup ground chia seeds (or oat flour)
- 1 teaspoons baking powder
- 3 tablespoons instant coffee
- Toppings: fresh berries, butter, syrup, nut or seed butter
- In a medium bowl, whisk together the eggs, agave, and melted coconut oil.
- Add the almond flour, ground chia seeds, baking powder, and instant coffee.
- Whisk everything together and set in the fridge for about 10 minutes while your waffle iron heats up.
- Brush the inside of your waffle iron with melted coconut oil.
- Place 1/4 – 1/3 cup of the batter onto the center of your waffle iron.
- Close the iron and cook until your waffle iron light turns off. Gently remove from the iron with a fork.
- Repeat the process of greasing the waffle iron and cooking until all the batter is used. It should yield 3 – 4 waffles. If you use 1/4 cup batter per waffle, you’ll make 4 waffles.
- Top with your favorite nut or seed butter (I used sunbutter) and fresh berries!
