Frozen White Chocolate Raspberries

Frozen raspberries are a delicious, healthy snack coated with sweet white chocolate. Keep them stashed in your freezer for a fun treat!

Ingredients

  • 1 cup fresh raspberries
  • 1/2 cup white chocolate chips
  • 1 tablespoon refined coconut oil

Instructions

  1. Rinse and thoroughly dry your raspberries. If you have time, allow them to air dry to get rid of any excess water on the outside. 
  2. Place the white chocolate and coconut oil in a small, microwave safe bowl.
  3. Microwave, stirring every 30 seconds until the chocolate is smooth. 
  4. Place a raspberry into the white chocolate and use a fork to turn it over and coat it. 
  5. Use the fork to pull the raspberry up from the bowl and allow excess chocolate to drip off into the bowl.
  6. Place on a plate lined with parchment paper. 
  7. Chill in the fridge for 15 minutes to 2 hours depending how frozen you want the berries. 
  8. Store in the freezer or fridge.
