Chewy Cashew Butter Sprinkle Cookies

These gluten free, 7 ingredient Chewy Cashew Butter Sprinkle Cookies are so easy to make, so fun to eat, and have the most amazing texture!

Ingredients

  • ½ cup cashew butter
  • ⅓ cup agave nectar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1½ cup almond flour
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • sprinkles

Instructions

  1. Preheat oven to 350F.
  2. Add the cashew butter, agave, vanilla, and egg to a large bowl and whisk until combined.
  3. Add the almond flour, baking soda, and sea salt.
  4. Whisk until combined.
  5. Use an ice cream scooper to scoop large balls and roll them in your hands to make them smooth.
  6. Spread the sprinkles out on a plate or shallow bowl in a single layer.
  7. Roll the cookie dough ball around until it’s completely covered with sprinkles.
  8. Place it on a baking sheet lined with parchment paper.
  9. When you have about 8 on your sheet and bake for 10 minutes until the edges are golden brown.
  10. Transfer to a cooling rack and enjoy!
