Six-Ingredient Carrot Cake Overnight Oats (Only 5-Minutes to Prep)

Carrot cake overnight oats are an easy and delicious breakfast! Start your morning with extra veggies but feel like you’re eating cake!

Ingredients

  • 1/2 cup old fashioned gluten free rolled oats
  • 1/2 cup oat milk (How to Make Oat Milk)
  • 2 tablespoons finely shredded carrot
  • 2 tablespoons chopped walnuts
  • 1 tablespoon agave nectar (honey or maple syrup also works)
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Place the oats, milk, carrots, walnuts, agave, and cinnamon in a jar with a lid. 
  2. Place the lid on the jar and shake. 
  3. Chill the oats for at least 2 hours in the fridge but preferably overnight. 
  4. Enjoy the next day, chilled and topped with chopped walnuts and a sprinkle of cinnamon.
