30-Min Banana Chocolate Chip Bars using Almond Flour

Banana chocolate chip bars are a delicious way to use up some spotty bananas! They are the perfect easy snack or treat during the day!

Ingredients

  • 2 bananas (1 cup mashed)
  • 3 eggs
  • 1/2 cup coconut sugar
  • 2 tablespoons agave nectar
  • 1 teaspoon vanilla extract
  • 1 1/2 cup blanched almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350F. 
  2. Mash the bananas in a large bowl. 
  3. Whisk in the eggs, coconut sugar, agave, and vanilla. 
  4. Add the almond flour, baking powder, salt and cinnamon. 
  5. Whisk to combined. 
  6. Fold in most of the chocolate chips, reserving some to spread on top. 
  7. Line a 9×9 square pan with parchment paper and transfer the batter to the pan. 
  8. Spread it evenly across the bottom and top the batter with the remaining chocolate chips. 
  9. Bake for 20-25 minutes until golden on the top. 
  10. Allow the bars to cool in the pan. Slide a knife around the edges and pull the bars up from the pan with the parchment paper. 
  11. Cut in 16 squares and enjoy!
