Peach Baked Oats for One

Baked oats for one is such a wholesome and easy breakfast that feels so indulgent! Try this peach baked oatmeal or swap a different fruit!

Ingredients

  • 1/2 cup old fashioned rolled oats
  • 1/2 cup peach slices
  • 2 tablespoons agave nectar (honey or maple syrup also works)
  • 2 tablespoons favorite milk (How to Make Oat Milk)
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • extra peach slices for topping

Instructions

  1. Place ingredients into a blender and blend on high for about 1 minute until combined.
  2. Transfer the blended oatmeal to a ramekin, mug, or small bowl.
  3. Microwave for 1 minute – 1.5 minutes. The top and edges of the oatmeal will puff up and appear cakey but will still be gooey and an oatmeal consistency once you dig in.
