Sweet Potato Pizza Bites

Ingredients
- about 4 medium sweet potatoes, sliced into ¼ inch thick rounds
- 1 Tbsp. olive oil
- ½ tsp. salt
- 1 jar pizza sauce
- 4 oz. mozzarella cheese
- basil and herbs for garnish
Instructions
- Preheat the oven to 400F.
- Arrange the sweet potato slices on a baking sheet and drizzle with the olive oil and sprinkle with salt.
- Roast them for 10 minutes before flipping and roasting on the other side for 5 minutes.
- After the 15 minutes is up, spoon about 1-2 teaspoons of sauce on each round and top with mozzarella cheese.
- Slide the baking sheet back into the oven and bake for an additional 5 minutes, or until the cheese melts.
- Top with basil and or herbs and serve!
