Superfood Beet Bites

Ingredients

  • 1 large LoveBeets organic fully cooked beet
  • ¼ cup agave nectar (honey or maple syrup also works but increases net carbs)
  • ¼ cup natural almond butter
  • ¼ cup hemp hearts
  • 1 cup blanched almond flour
  • ¼ unsweetened shredded coconut
  • 2 tablespoons cacao powder (cocoa powder works too)
  • ½ teaspoon sea salt
  • optional: plastic candy bags, cheesecloth (white fabric or gauze), butcher’s twine, plastic adhesive googley eyes

Instructions

  1. Combine the beet, agave nectar and almond butter in your food processor.
  2. Process for about 20 seconds, then scrape down the sides and process for another 10-20 seconds. You want everything to be smooth and fully combined.
  3. Add the hemp hearts, almond flour, coconut, cacao powder, and sea salt to the food processor.
  4. Process for 10 – 20 seconds, scrape down the sides and process another 10 – 20 seconds.
  5. Roll the batter into balls and insert sticks into the balls.
  6. Place the balls in the freezer for a few hours.
  7. Optional (ghosts!!!): place the chilled balls into small plastic candy/pop baggies.
  8. Tie a piece of cheese cloth, white fabric, or gauze around the stick, securing with some butcher’s twine.
  9. Affix some plastic googley eyes onto the “heads” of the ghosts and keep chilled until ready to eat.
