Pan Fried Gorgonzola Gnocchi

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 lb. gnocchi
  • 1 cup heavy cream
  • 1/2 cup crumbled gorgonzola cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper

Instructions

  1. Melt the butter and heat the oil in a large skillet over medium-high heat. 
  2. Add the gnocchi to the pan and fry for 15 minutes, stirring and tossing frequently until the gnocchi is golden brown and crispy on the outside.
  3. After the gnocchi is done getting all nice and golden brown, add the cream and gorgonzola to the pan.
  4. Stir in the minced garlic, salt, and pepper and cook, stirring frequently for about 5 minutes until the sauce thickens.
  5. Plate, grind some fresh pepper on top and enjoy!
