Gluten Free Cinnamon Flax Pancakes

Easy low carb + gluten free Cinnamon Flax Pancakes are the perfect addition to your weekend brunch! They’re loaded with protein, fiber, and healthy fats and keep you full all morning!

  • 2 cups almond meal/flour
  • 1/4 cup flax meal
  • 1/4 cup coconut sugar
  • 2 eggs
  • 1 cup unsweetened vanilla almond milk
  • 1 teaspoon cinnamon
  • 1 tablespoon coconut oil, melted
  • 1/4 teaspoon sea salt
  • 1 teaspoon baking powder
  • coconut oil for frying


  1. Mix together all ingredients.
  2. Let sit for 3 minutes to set.
  3. Melt coconut oil in frying pan over high heat.
  4. When pan is hot, turn heat down to medium heat.
  5. Place 2 silver dollar pancakes in the pan over medium heat (each pancake is 2 – 3 inches wide).
  6. After about five minutes, or when the edges appear more firm and dry, flip!
  7. Cook for another couple minutes and transfer to a plate.
  8. Repeat until all the batter is used up.
  9. Top with syrup, peanut butter, fresh berries, whatever you like!!
