Ingredients

  • 2 bananas
  • 1 1/3 cup whole milk
  • 1/4 cup arrowroot flour
  • 1/4 cup agave nectar
  • 1 teaspoon vanilla extract
  • 12 vanilla cookies (Nilla wafers or these gluten free pecan shortbread cookies are fun!)
  • 1 cup whipped cream
  • 12 banana chips for garnish

Instructions

  1. In a large bowl or measuring cup, mash the bananas. 
  2. Add the milk, arrowroot, agave, and vanilla. 
  3. Use an immersion blender to blend until it reaches desired consistency. If you don’t have an immersion blender, you can mash the bananas to desired consistency before adding the rest of the ingredients, or blend for about 20 seconds.
  4. Pour into a pot over medium heat and whisk consistently for 5 minutes until thickens. 
  5. Allow the banana pudding to cool. 
  6. Break apart your cookies, I used about 2 cookies per serving.
  7. Layer the cookies, whipped cream, and banana pudding. Top with whipped cream, a crumble of the cookie, and two banana chips. 

Tips

  • Nutrition facts are calculated without the cookies and banana chip garnish. Whatever cookies you end up using, add them to the final nutrition count 🙂
