BBQ Cauliflower Pizza

Ingredients

  • Crust:
  • 8 egg whites
  • 1/4 cup coconut flour
  • 1/2 cup blanched almond flour
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 24 tablespoons olive oil for brushing
  • pinch of sea salt for edges
  • Toppings:
  • 1/4 a head of cauliflower, cut in small florets
  • 2 tablespoons coconut oil
  • 1/4 teaspoon garlic powder
  • 3 tablespoons BBQ sauce
  • 1/2 cup shredded Parmesan cheese
  • one or two handfuls arugula
  • 2 tablespoons BBQ sauce for drizzling

Instructions

  1. Preheat oven to 400F.
  2. Mix up your crust by whisking together the egg whites, coconut flour, almond flour, baking powder, sea salt, onion powder, and garlic powder in a bowl.
  3. If things look clumpy, just keep whisking, only a little harder and faster until everything is well combined and sticky looking.
  4. Place in the fridge until you’re ready to use it.
  5. In a large bowl, combine your cauli florets, coconut oil, garlic powder, and BBQ sauce.
  6. Toss until the cauli is well coated.
  7. Place the cauliflower on a lined baking sheet and roast in the oven at 400F for 20 minutes. When it is done baking, place in a bowl and set aside.
  8. Reduce the oven heat to 350F.
  9. Get new parchment paper to line the pan. Use a spatula to evenly spread the dough mixture into a circle. You want it to be 1/2 an inch thick or less.
  10. The texture of the dough won’t be like typical flour dough. It’ll be sticky and more like batter. Trust me on this!
  11. Once the dough is in the perfect form, brush it liberally with olive oil.
  12. Bake it for 20 minutes.
  13. Remove the crust from the oven, sprinkle on the cheese, and spread the cauli on top. Drizzle an additional couple tablespoons of BBQ sauce on top of the pizza.
  14. Brush the crust edges again with olive oil and sprinkle with sea salt.
  15. Bake for another 10 minutes.
  16. If you want things to brown up a bit, broil on high for 2 minutes. This will make the outer crust more crunchy and yummy.
  17. Remove the pizza and let it sit for a couple minutes. Sprinkle with arugula and cut into slices!
