Vegetarian Tikka Masala

And, after all the cookies and indulgences of the holiday season, I got a bunch of savory, healthy dinner requests. I feel you. 

I went to a college in an old coal mining town. At the time, there was a whopping four restaurants open in the town. THREE of those restaurants were Italian (I ate a TON of cheesy calzones) and one was a really delicious Indian restaurant that sparked my love for Indian food. It was a weekly habit. 

Until that first bite, I had never tasted anything so delicious, so flavorful, and so unique. Still, whenever I get the opportunity, I jump at the chance to eat Indian food. I looove it. 

Vegetarian Tikka Masala

This month I’m really focusing on tasty, savory dinners before those Valentine’s Day sweets hit. I’m all about those easy flavorful dishes and I know you’ll LOVE this Vegetarian Tikka Masala! It’s so simple, packed with fun flavors, packed with veggies, and ohhh so delicious. PLUS!! If you are doing Whole30, this meal is compliant and a complete game changer. Also, it’s gluten free, paleo, dairy free, but NOT flavor free ๐Ÿ˜‰ 

So, let’s get to it and make it this tasty Vegetarian Tikka Masala woot woot!! p.s. I have another Tikka Masala recipe on the blog but that uses a store-bought jar sauce. I know store-bought sauces can be variable, so I wanted to have a homemade version on the blog for you guys!! Let’s do it:

Place the cauliflower and onions in a pan over medium-high heat with a couple tablespoons of avocado oil. Sautรฉ for about 10 minutes, stirring occasionally until the veggies start to brown. Add the eggplant and red pepper and continue to cook until all the veggies are browned, about 5 – 10 minutes. 

Vegetarian Tikka Masala

When the veggies are cooking, add the water, tomato paste, diced tomatoes, coconut milk, curry powder, salt, ginger, garlic, and lime juice to a large sauce pot. Bring to a boil and reduce to a simmer. 

Once the veggies are browned, add them to the sauce. Add the drained and rinsed chickpeas to the pot and cook for an additional 5 – 10 minutes. 

While the sauce and veggies are getting to know each other, cook your cauliflower rice. Full transparency: I’ve started to buy frozen cauliflower rice that I can just warm quick in the microwave. If you want to make your own, check out this post HERE.

Plate the cauliflower rice. Top it with a big scoop of the tikka masala and sprinkle with some cashews and chopped green onion.

Ingredients

  • 1 small head cauliflower, chopped
  • 1 sweet onion, chopped
