Instant Pot Beef Broccoli + Sweet Potato Noodles
Add this Instant Pot Beef Broccoli + Sweet Potato Noodles to your weekly lineup! It’s gluten free, paleo, and made all in one pot!

One of my favorite things to order off a menu at restaurants is tender, tasty, mouthwatering beef. Jaryd always laughs at me because I literally CANNOT pass up a piece of juicy meat with a tasty sauce.

Instant Pot Beef Broccoli + Sweet Potato Noodles

And since I am now on the instant pot kick (have you seen my chicken zoodle soup?!) I’m not ready to slow the instant pot train just yet.

I’ve been doing a handful of polls on Instagram stories because I want to make recipes you want to see! So many of you wanted more meaty recipes so I figured why not combine the Instant Pot love with the meat love and make a really tasty and tender Beef and Broccoli situation.

Instant Pot Beef Broccoli + Sweet Potato Noodles

The Instant Pot makes this beef and broccoli super tender quickly and it’s best with sweet potato noodles! You can serve this over chickpea noodles or zoodles, but I love the heartiness of sweet potato noodles and their added sweetness.

This makes for an easy, one pot dinner or can be made for an easy addition to your weekly meal prep!

So let’s make some Instant Pot Beef and Broccoli with Sweet Potato Noodles

Begin by spiralizing the sweet potatoes. Once spiralized, turn the Instant Pot to “Sauté” for 10 minutes. Add the coconut oil to the pot.

Sauté the sweet potato noodles for 10 minutes, tossing frequently to soften them. Once cooked, remove them from the Instant Pot and set aside until serving time.

While the sweet potato noodles cook, slice the steak, going against the grain, and chop up the broccoli into bite sized pieces.

Whisk together the coconut aminos/soy sauce, honey, arrowroot powder, vinegar and black pepper.

Place the steak at the bottom of the Instant Pot and add the broccoli on top of it. Pour over the sauce.

Secure the lid on the Instant Pot and turn the knob to “Sealing.” Select “Pressure Cook” or “Manual” and set the time for 8 minutes. Let the Instant Pot complete the cycle and allow it to naturally release for 5 minutes before carefully preforming a manual release.

Serve the beef and broccoli over the sweet potato noodles and top with green onion and sesame seeds, if desired.

Flavors were excellent! Loved this recipe. The only suggestion I can make is to cook the broccoli right at the end bc it gets very soft. Will definitely be making again. Thanks!
