Place your pecans, cashews, coconut, hemp seeds, flax seeds, coconut sugar, and cacao powder in a bowl. If your nuts are already chopped, then you’re good to go. If they’re not, you may want to blitz them in a food processor or blender for a couple seconds to get them to be a good size. I tend to like mine a but more big and chunky.
In a saucepan over medium heat, whisk the ghee (coconut oil or butter also works), peanut butter, and agave nectar.
Once the sauce is combined and thickened a bit, about 2 minutes, remove from heat and pour over the nut and seed mixture.
Fold the peanut sauce into the nut and seed mixture until everything is completely coated.
Spread the granola out in a single layer on a baking sheet lined with parchment paper. Don’t worry if it’s a bit clumpy, those will end up being your delicious clusters!!
Bake in the oven for 12 minutes.
Use a spatula to gently toss the granola and bake for another 7 minutes.
Remove from the oven and allow to cool completely before you sprinkle with additional sea salt and chocolate chunks.
