Nothing says it’s the freakin’ weekend quite like waffles. Ok, pancakes are up there. But waffles WAFFLES make me happy. I feel like I need more yummy breakfast recipes on the blog and so I have soo many brunch ideas swirling around in this pine nutty brain. Be prepared, you guys. Yummy things are happening…

You know when you’re sipping your coffee and you’re all like, “This is great and all but I kinda need an IV to pump some caffeine in my veins.” Maybe that’s unrealistic, no one in their right mind would put in a coffee IV, right? 

I thought coffee waffles would be the next best thing. Well maybe a personal barista in my kitchen would be the next best thing, but you get it. A little jump to get you buzzing around like LET’S DO THIS.

Plus there’s a sunbutter drizzle and I know you can’t say no 🙂

So here’s how you make Coffee Bean Waffles:

In a medium bowl, whisk together the eggs, agave, and melted coconut oil.

Add the almond flour, ground chia seeds, baking powder, and instant coffee.

Whisk everything together and set in the fridge for about 10 minutes while your waffle iron heats up.

Brush the inside of your waffle iron with some melted coconut oil.

Place 1/4 – 1/3 cup of the batter onto the center of your waffle iron. 

Close the iron and cook until your waffle iron light turns off. Gently remove from the iron with a fork. Repeat the process of greasing the waffle iron and cooking until all the batter is used.

If you use 1/4 cup batter per waffle, you’ll make 4 waffles.

 Top with your favorite nut or seed butter, fresh berries, and a chia seed sprinkle!!
