Welcome to The Toasted Pine Nut! Yes, I know, another food blog. Blah blah blah. But wait!! This one is different… I promise!
It’s been a long journey getting to this point, but here are the cliff notes:
I met my husband in college. I was 18 at the time. It was love at first sight… for him 🙂 I, on the other hand, rejected his advances, rolled my eyes at his jokes, and, found him to be kind of obnoxious. Then one day, he made me laugh. The rest is history.
Jaryd enjoys eating salad. He never misses his morning run. He has a 20 story threshold before he even considers taking an elevator. I, on the other hand, am a second piece of cake kind of girl. Shortly before our first wedding anniversary my husband was diagnosed with Type 1 Diabetes. The diagnosis changed both our lives.
At first I oscillated between 1) trying to cook medicore recipes and pretending I enjoyed it, and 2) making two separate meals. Then I began doing research, reading recipes, and really trying to find something we could both eat and love. Easier said than done.
I want to share my recipes and experiences with you. I want cooking healthy to be easy for people. I want to be a resource where people can be guaranteed delicious, wholesome recipes.
