I am in it to win it this year, guys. I’m kind of rocking St. Patty’s Day. Aaaand it all started with these perfect little Irish potatoes. Growing up I remember eating these throughout the whole month of March. I mean, why not. This year, I was kind of dreading making them because the classic recipe calls for a butt load of confectioner’s sugar and I wanted to keep things sugar free. Well, I kind of rolled around in bed last night doing all these what ifs in my head. I marched to the kitchen this morning on a mission. The result? YASSSS.
