One of my favorite things to eat is sushi. Without fail, whenever Jaryd asks what we want to order in or where we want to grab food I’m all eager beaver, “sushi?!” without hesitation. I’m pretty stuck in my ways and get the same rolls over and over.
This past weekend Jaryd and I went out to dinner which was amazzzzing. Even though it was unbearably cold out, we walked around to different shops, ate dinner, and had such a fun night. We normally do a weekly date night at home (aka make yummy dinner and drink the wine), but it’s fun every now and then to have someone else make the yummy dinner and serve the wine 😛

GUYS! We got an Apple computer. A MacBook, or something? I’m pretty sure it’s a pro too which means it gets paid for its super awesome skills and can no longer compete as an amateur. Also, it means that the awesomeness of my pine nut posts will skyrocket (come on, we both know that’s not possible). The awesome sauce bar is pretttay prettay high.
Two things: First, if you have been waiting on pins and needles with regard to my St. Patty’s Day dinner, let’s just cut to the chase. I bombed. The cauli mash was insanely good, and I will share it here soon. The Corned Beef, however, was no good. I probably drank a gallon of water last night because it was so damn salty. I’m sure it was some amateur mistake, and I know I should have done better research before diving in, but hey. I’ll get ’em next year. At least my Irish potatoes were on point!
We don’t do too much meat in our house, maybe once a week. We mainly make vegetarian or fish. Lately, though, meat has been making a resurgence. I came across this recipe for “low carb” jalapeño chicken on Pinterest. The recipe called for Panko breadcrumbs and there was an outcry in the comments section that Panko most certainly isn’t low carb. Naturally, I was drawn to this.
