When I was growing up my mom always packed my lunches for school. I loved the mix of things she packed on rotation and I loved her little napkin notes. It wasn’t until my kids started preschool that I realized how difficult packing lunch boxes can be.
So it just occurred to me that my last three (including this one) posts were peanut/nut butter related. Sorry, not sorry. Buuuut if you are so not into nut butters, my sincerest apologies. Otherwise, no regrets. Sweet potato noodles with peanut sauce? Bomb. Creamy crunchy peanut butter bars? Bomb. These almond butter chia cookies? I have no words but I’m making hand motions and nodding my head YESSS. Really really good, you guys.
Memorial Day is only a couple weeks away which means it’s the unofficial kickoff to summer aka my favorite season. I have a newfound love for grilling because it’s something you can prep hours in advance (hello juicy marinade), but it’s also easy cleanup and makes dinner come together in minutes. Woot woot!
It’s girl scout cookie season, you guys!! The addiction is real! I know a fan favorite are the thin mints so I thought it would be fun to play off the flavors of the classic cookie. I added some crunch and pizazz and I know you guys will be as obsessed as I am with these Peppermint Pecan Brownies.
