So lately I’ve been trying to make quick and easy (and delicious, obviously) lunches. I want to have healthy meals that are do-able even on the craziest day. This is as easy as it gets! This pesto is delicious and you can really put it on a ton of different things besides veggies noodles.
Lemon poppy seed muffins were always one of my favorite go to treats. I mean that tangy, sweet lemon, that crunchy poppy, that moist middle… it screams delicious! I’m kind of a lover of all things lemon lately. Lemon in the morning, lemon in the evening, lemon at supper time… oh wait. No, that’s pizza bagels. Holds true for lemons, though.
Sooo, I have a secret. As you may or may not have picked up from my previous hummus recipe, IIIIIII get a weee, ity bity little bit sick of hummus from time to time. I know, blasphemy. Perhaps this is self-inflicted, but we go through hummus spurts that leaves me feeling very over hummus. I’ve tried different hummus recipes but they never really stick. So, I tend to constantly be searching for healthy snacks that aren’t hummus.
OK! I have my naptime latte and am ready to sit down a type a post for you peeps 🙂 Er, I need one more sip before we begin. Ok, that was more like 3 gulps, but now I’m READY!!!
This was quite the day. My youngest son is 6 months and was up for an hour last night crying 🙁 I can only guess he’s teething (pretty much what I say anytime I have no idea what his deal is), but this has been a pattern for the last week.
