One of my favorite vegetarian dishes is eggplant parmesan. I love the cheesiness. I love that it vaguely reminds me of pizza. Let’s face it, I really really love the thick crispy breading.
There’s this interesting thing happening lately. I feel like I’ve been consciously making a positive choice in my life and it’s impacting me in the best way. I don’t mean to get too “positive vibes man” on you, as you all roll your eyes and be like “ugh, Lindsay’s so west coast now,” but hear me out.
This past weekend Jaryd and I went out to dinner which was amazzzzing. Even though it was unbearably cold out, we walked around to different shops, ate dinner, and had such a fun night. We normally do a weekly date night at home (aka make yummy dinner and drink the wine), but it’s fun every now and then to have someone else make the yummy dinner and serve the wine 😛

Merry Christmas, everyone! Ok, so what?! I’m a day late, don’t be such a grinch. I made Jaryd run down the delivery man to check his truck for a package. Not just any package. It was THE package. The package that would make or break Christmas. The package that is all my kid’s been talking about for the last month.
These veggie wraps are a staple in our house. Every time I go to the food store I buy wraps and goat cheese as a back up. If there’s ever a night I can’t quite gather the energy to make something new for dinner, we have these easy veggie packed wraps for dinner.
