One of my favorite vegetarian dishes is eggplant parmesan. I love the cheesiness. I love that it vaguely reminds me of pizza. Let’s face it, I really really love the thick crispy breading.
This past weekend Jaryd and I went out to dinner which was amazzzzing. Even though it was unbearably cold out, we walked around to different shops, ate dinner, and had such a fun night. These wraps are a staple in our house. Every time I go to the food store I buy wraps and goat cheese as a back up. If there’s ever a night I can’t quite gather the energy to make something new for dinner, we have these puppies.
The veggies are perfectly roasted. The balsamic reduction adds a nice tangy bite. And the goat cheese mellows everything out with a smooth and sweet aftertaste. It’s warm. It’s inviting. It’s low carb. I’m telling you, this panini is perfection all bundled up with pristine golden grill lines saying, “Cradle me in your hands and take a bite. You know you want to.”
