January is almost over, and I know SO many of you are rocking whole30 or just generally trying to stay on track for the new year. I thought it would be fun to make a really yummy spiralized dish that is whole30 compliant, super healthy, super tasty, and super easy to throw together.
I think one of the hardest things to do is come up with quick and easy weeknight meals. I try my best to plan out my week, but I always have a handful of dinners that seem so rushed and thrown together. When I come across tips or shortcuts that make life run a bit smoother, I’m a sign me up, shout it from the rooftop kind of gal.
There are so many things I love about this recipe. First things first: the flavors!! Holy happiness, the flavor combo on this bad boy is unreal. Add tender and moist dark meat thighs (my absolute FAVE) to a beautiful pool of fire roasted tomatoes and it’s new heights amazing. Zero exaggeration, you guys!!

But this week, THIS POST, I really really mean it 🙂 This past Wednesday was the first day of fall. Google made it official by changing their logo to be letter shaped squash. There was outrage in the foodie community because no one could identify the purple “e” squash. The horror!
