Riddle me this. Why are there no “healthy” restaurants that have a fun play area for kids? Why are the only restaurants that have designated kid areas fast food joints? I have a confession…
One of my favorite things to get at restaurants is lettuces wraps! I love the rolled up lettuce crunch followed by the delicious sauce dripping down your hand. I love the flavors and I love how everyone kinda does it differently. Mm, let’s take a minute to imagine that first bite.
The unofficial start to summer is only a couple weeks away. Two things immediately come to mind. First, it’s grilling season, baby!! Second, fresh and crunchy salads are my jam. Lately? I want something refreshing with a sweet and tangy taste that has that, “I need to eat this entire plate and grab some seconds” urgency about it.
I’m a bbq lover. There’s something about that sweet and spicy bbq flavor that I just can’t get enough of! It’s comforting and delicious and OH so indulgent. I thought it would be fun to take the bbq flavor and lighten it up a bit with an extra serving of veggies.

Love this recipe for an easy weeknight dinner!! Make the pesto, pasta and chicken ahead for a quick, throw together meal! It’s also a really great recipe for meal prep and packing for lunches! The chickpea pasta keeps it lower carb and gluten free. Even the pickiest eaters won’t know the pesto has KALE!! Let me know what you think!
